- Use 800 gms Rack of Lamb mutton / ribs
- Use 2 tbsps Olive oil
- Provide 1 tbsps cumin Ground
- Get 1 tsp Paprika
- You need 1 tsp Red chilli powder
- Provide 1 tsp Oregano
- Prepare 1 tsp Thyme
- Take 1 tbsp Black Pepper Ground
- Provide 1 tbsp Rock Salt
- Use 1 tbsp Garlic paste
- You need 1 tbsp Lime juice
- Take 3 tbsps Honey
- Get 1 tbsp Fish Sauce
- Get 1 tbsp Tamarind Paste
Instructions to make Sticky Spicy Mutton Ribs:
- Clean the rack and you can start with the full rack or cut into individual ribs. I cut it into individual ribs so that there's more spices on the ribs.
- Mix together all the ingredients under "For Marination". Use this mix to rub the rack of lamb rib and marinate for at least an hour (preferably over night).
- Preheat oven to 150 deg C. Cover the ribs with foil and roast for 1.5 hours if using individual ribs. (For full rack cook for another 10 mins). Turn over the ribs half way in.
- Mix together the ingredients under "For Glaze".
- If you started with a full rack allow the ribs to cool down and then cut them into individual racks. If you started with individual ribs skip to Step 6.
- Place the individual ribs on a baking tray and brush the mixed glaze onto each rib. Ensure you give a nice coat on all sides.
- Bake for 10-15 minutes until the glaze gets sticky. DO NOT let your glaze burn by keeping it too long.
- And you are done. Now plate it and serve with some roast potatoes or just as is.
