The ingredients needed to make Sabzi Lauki Dahiwali:
- Use 500 gram lauki/bottle guard
- Use 3 cup whipped curd
- Prepare 2 tbsp malai/homemade cream
- Provide 1 tsp ginger green chilli paste
- Use 1 green chilli slit and cut into 2 long piece
- Use 1 tsp kasuri methi
- Use 1 medium size onion chopped
- Get 2 tbsp oil
- Provide 1 tsp cumin seeds
- Take 1/2 tsp fennel seeds
- You need 1 pinch hing/asafoetida
- Prepare 8-10 curry leaves
- Provide 1/2 tsp haldi (Turmeric)powder
- Take 2 tsp coriander powder
- Use 1 tsp red chilli powder
- Prepare 1 tsp garam masala powder
- Take to taste Salt
- Use as needed Coriander leaves for garnishing
Steps to make Sabzi Lauki Dahiwali:
- Take curd, malai and whisk it vigorously and keep aside.
- Wash and peel the bottle gourd and cut into desired shape and size.
- Collect all ingredients for sabzi.
- Heat oil in a kadai add hing, cumin seeds, curry leaves, fennel seeds.
- Let the cumin seeds crackle add ginger, green chilli paste, silt green chilli and onion and saute for few seconds.
- Then add kasuri methi and mix well.
- Now add lauki and mix well
- Now add all powdered masala and saute it on low flame. Add little water to prevent masala from burning.
- Close lid and cook for 5 minutes. And then pour curd mixture and stir till boiled.
- Let simmer for 5 minutes. Remove from heat and garnish with coriander leaves.
- Delicious dahiwali lauki ki sabzi is ready to be served. Serve hot with roti.
