The ingredients needed to cook Collards:
  1. Prepare 5 pounds collard greens
  2. Prepare 2-1/2 tablespoons Pink Himalayan salt
  3. Use 1/3 cup distilled white vinegar
  4. Use 1/4 cup + 2 tablespoon sugar
  5. Get as needed water
  6. Take 3 tablespoon bacon Drippings
  7. Prepare 1/4 pound Bacon

  1. Look over and wash the leaves. Remove thick stems.
  2. Add bacon drippings
  3. In a pot add salt, sugar, 2 cups water and vinegar.
  4. Put on to heat. Add bacon and bring to boil
  5. When the broth is boiling good add the collards. This allows the greens to shrink and fit in the pot faster.
  6. Stir every 20 minutes don't allow them to clump up
  7. After 1-1/2 hours mix the remaining sugar with water and add to the collards. Keep adding water as needed. I think I used a gallon or more total.
  8. Add the rest of the seasonings stir well
