Instructions to make Okra/ Vendakka Sambar:
- Take all the ingredients under To pressure cook in a cooker, add water and cook for 4 whistles. Lower flame for 10 minutes.
- Soak tamarind in water. Take ladies finger and dry roast till stickiness disappears. Keep aside.
- Heat oil in a vessel, add vadavam and dry red chilli. (Instead of vadavam you can also add mustard seeds,urad dhal, fenugreek seeds and chopped shallots and fry till dark brown)
- Next add curry leaves,1 tbspn coriander leaves.
- Now add onions and saute till translucent. Then add tomatoes cook till mushy.
- Add salt and red chilli powder. Saute till raw smell goes.
- Mash the cooked dhal in pressure cooker and add the ladies finger to it.
- Extract tamarind water. Add dhal and tamarind water. Check salt and tanginess. Cover and cook till it boils.
- Garnish with coriander leaves. Serve hot with steamed rice or for tiffin.
