The ingredients needed to prepare Udupi sambar:
- Take For sambar masala-
- Take 10 Kashmiri chillies
- Use 2 tbsp coriander seeds
- Get 2 tsp Urad dhal
- Use 1/2 tsp fenugreek seeds
- Prepare 1 tsp cumin seeds
- Provide 6 pepper corns
- Use 1 cup Scraped coconut
- Prepare 1 lime size Jaggery
- Provide 1 Tamarind Gooseberry size (soak in warm water)
- Use 1 cup Thoor dhal
- Get 1 tsp Turmeric powder
- Use 1 Carrot
- Provide 1 Manglore cucumber
- Prepare to taste Salt
- Provide For tempering:
- Provide 1 tsp Mustard seed
- Get little Hing
- Take 15 Curry leaves
- You need 4 dry red chillies
Steps to make Udupi sambar:
- Wash and Cook thoor dhal in a pressure cooker with turmeric powder. Mash and keep.
- Heat a pan, add 1tsp oil, fry all the dry ingredients and remove pan and add coconut, mix, let it cool. Grind as paste
- In a vessel cook the vegetables until soft, add mashed dhal, ground paste, jaggery, salt to taste, and add tamarind juice.
- Let it boil for few mins, now tempering the sambar with mustard seed, chilli, curry leaves. If you like add 1tbs of ghee to add more flavour
